Cranberry Eggnog Scones
2 Cups Flour
1/2 Cup Cornmeal
1/3 Cup Sugar
1 Tbsp. Baking Powder
1/2 tsp. Salt
1/3 Cup Butter, chilled
1 Cup Fresh Cranberries
2/3 Cup Eggnog
3 Tbsp. Melted Butter
In a bowl mix flour, cornmeal, sugar, baking powder and salt. Cut in the butter using a pastry cutter or two knives until crumbly. Mix in cranberries and use a fork to stir in the eggnog. The dough should be sticky. On a floured surface, knead the dough using enough flour so your hand don't stick. Pat the dough into a 1/2 inch thick circle. Cut dough into circles using a glass. Place round dough on a greased cookie sheet. Keep kneading dough and making circles until all dough is used. Brush with melted butter. Bake in 375F oven for 15 minutes. Serve warm, enjoy!!
