BLT Pasta
8 Slices Bacon, cooked and chopped
1 Red Onion, chopped
3 Garlic Cloves, crushed
1/2 Cup Red Pepper, finely chopped
2 Tbsp. Olive Oil
1 tsp. Seasoning Salt
5 Cups Grape Tomatoes, cut in half
500 grams Penne Pasta, cooked and drained
4 Cups Arugula
1/3 Cups Cream
1 tsp. Basil, fresh or dried
1/2 Cup Parmesan Cheese
In a large frying pan, sauté onion, garlic and red pepper in the olive oil until softened. Add grape tomatoes, and seasoning salt. Cook for 10 minutes. Add the cream and bacon and cook for two minutes. Take off heat and toss with cooked pasta, arugula and basil. Top with parmesan cheese. Enjoy!!!
