Chicken Tray Bake
1 Pound Chicken Thighs, boneless and skinless
2 Red Onions, cut into thick wedges
4 Red Potatoes, cut into thick slices
1 Red Pepper, cut into thick slices
1 Green Pepper, cut into thick slices
1 tsp. Seasoning Salt
1 tsp. Garlic Powder
1/2 tsp. Pepper
3 Tbsp. Olive Oil
1 Lemon, juice
1/2 Cup Almonds, blanched and chopped(optional)
3/4 Cup Greek Yogurt, to serve
Heat oven to 400F. Place chicken, onions, potatoes and peppers in a large roasting pan. Sprinkle seasoning salt, garlic powder and pepper over items. Drizzle with olive oil and the juice from the lemon. Mix well, until all ingredients are covered. Spread mixture in the bottom of the pan evenly and bake for 30 minutes. Toss items and cook another 10 minutes. Sprinkle with almonds and bake another 10 minutes or until chicken is cooked through. Serve in a bowl with a big dollop of greek yogurt. Enjoy!!!!
