Vegetable Curry
1/4 Cup Butter
2 Tbsp. Olive Oil
1 Onion, finely chopped
3 Carrots, sliced
2.5 Tbsp. Curry Powder, any type you have
1/8 tsp. Pepper
1/8 tsp. Seasoning Salt
1/8 tsp. Red Pepper Flakes
1/4 Cup Water
I Head Cauliflower, cut small
3 Potatoes, peeled and diced small
Heat butter and olive oil in a large pot on medium to high heat. Add onion and carrots, cook until tender. Season with curry powder, seasoning salt, pepper and red pepper flakes. Add water, cauliflower and potatoes and coat with mixture. Reduce heat and simmer for 20 minutes or until potatoes are tender. Enjoy with butter chicken and naan bread!!!
