Fresh Peach Muffins
3 Cups Flour
1 Tbsp. Cinnamon
1 tsp. Baking Soda
1 tsp. Salt
1 Cup Oil
3 Eggs, beaten
1 1/2 Cups Sugar
2 Cups Peaches, peeled, pitted and chopped
Heat oven to 400F. Grease muffin tins.
In a large bowl, mix the flour, cinnamon, baking soda and salt. In another bowl, mix the oil, eggs and sugar. Stir the oil mixture into the flour mixture, until moist. Fold in peaches. Spoon into the muffin tins.
Bake for 25 minutes or until toothpick comes out clean. Cool 10 minutes, then take out of tins. Enjoy!! These muffins freeze well.
