Black Bean and Corn Salad
1/3 Cup Fresh Lime Juice
1/2 Cup Olive Oil
1 tsp. Garlic Powder
1 tsp. Salt
1/8 tsp. Cayenne Pepper
2 Cans Black Beans, rinsed and drained
2 Cups Corn, cooked in microwave and removed from cob or canned, rinsed and drained
1 Red Pepper, diced
2 Tomatoes, diced
1 Green Pepper, diced
1/2 Red Onion, diced
1/2 Cup Cilantro, chopped
Place lime juice, olive oil, garlic, salt and cayenne pepper in a small jar. Cover and shake until all ingredients are mixed well. In a salad bowl, combine black beans, corn, red and green peppers, tomatoes, red onion and cilantro. Pour mixed dressing over salad. Stir and enjoy!! For alternate recipe, you can add cooked quino for a healthy side dish.
