Strawberry Lemon Muffins
1/4 Cup Oil
1/2 Cup Milk
1 Egg
1 Tbsp. Lemon Juice
1 3/4 Cups Flour
1/2 tsp. Salt
1 tsp. Baking Powder
1/2 Cup White Sugar
1/4 Cup Brown Sugar
1 Cup Strawberries, washed and chopped
Heat oven to 375F. In a bowl, lightly beat together the oil, milk, egg and lemon juice. In a seperate bowl mix lemon juice, flour, salt, baking powder, white and brown sugar. Mix strawberries into the flour mixture. Stir in the oil mixture until moist. Fill lined muffin tin with batter, about 3/4 full. Bake for 25 minutes or until toothpick comes out clean. Enjoy!!!!!
