Ginger Carrot Soup
1 Tbsp. Oil
1 Onion, diced
3 Cloves Garlic, minced
4 Carrots, large
5 Potatoes, cut into chunks
3 Cups Vegetable Broth
2 tsp. Fresh Ginger, grated
1 tsp. Curry Powder
1 tsp. Seasoning Salt
1/2 tsp. Pepper
Heat oil in a soup pot over medium heat. Add onion and garlic. Saute for 4 minutes stirring often. Add carrots and potatoes and cook for 5 minutes. Pour the vegetable broth into the pot. Add fresh grated ginger, curry powder, seasoning salt and pepper. Bring to boil. Reduce heat to medium low and simmer for 20 minutes or until carrots and potatoes are tender. You can either use a potato masher to mash the carrots and potatoes or use a blender and puree in small batches. Reheat soup or serve cold. Enjoy!!!!!
