Chocolate Mousse
1 Package Real Chocolate Chips
2 Cups Heavy Cream or Whip Cream
1/4 Cup Coffee, hot
4 Eggs, room temperature
2 Tbsp. Sugar
Whip cream for topping
Whip the cream to form peaks. Put in the fridge. Melt the chocolate chips in the microwave at 30 seconds at a time, about 2 minutes, stirring in between until melted. In another bowl, whip the eggs with the sugar until very fluffy and thick, about 10 minutes. Stir the coffee into the melted chocolate. The mixture will start to thicken, quickly stir in the beaten eggs, then fold in the whip cream from the fridge. Pour mixture into glass bowls or wine glasses. Chill until firm and top with whip cream. Enjoy!!!!
