Sweet Potato and Carrot Soup
2 tsp. Olive Oil
1 Onion, diced
1 tsp. Seasoning Salt
2 Tbsp. Curry Powder
4 Carrots, peeled and cubed
1 Sweet Potato, peeled and cubed
4 Cups Chicken or Vegetable Broth
In a large pot on medium heat, saute onion in olive oil until softened. Stir in seasoning salt and curry powder. Add carrots and sweet potatoes. Stir in broth. Bring to boil and cover and simmer until vegetable are tender. About 30 minutes. You can mash the potatoes and carrots with a potato masher or leave as is. Enjoy with crackers or fresh bread!!
