Chocolate Thumbprint Cookies
1/2 Cup Butter or Margarine, softened
2/3 Cup White Sugar
2 Tbsp. Milk
1 Egg
1 tsp. Vanilla Extract
1 Cup Flour
1/3 Cup Cocoa Powder
1/4 tsp. Salt
1 Cup Walnuts, finely chopped
FILLING:
1/2 Cup Icing Sugar
1 Tbsp. Butter
2 Tsp. Milk
1/4 tsp. Vanilla Extract
24 Chocolate Kisses, unwrapped
In a bowl beat 1/2 cup butter or margarine, white sugar, egg, milk and vanilla until light and fluffy. In another bowl, combine flour, cocoa and salt. Add to the butter mixture slowly. Cover and put in fridge for one hour. Roll into 1 inch balls. Roll in nuts and place on greased baking sheet. Press your thumb into the centre. Bake in a 350F oven for 10 to 12 minutes. To make the filling combine icing sugar, butter, milk and vanilla. Mix until smooth. When cookies are done, fill centre with filling mixture and press in one chocolate kiss. Enjoy!!!!
