Low Fat Fruit Bran Muffins
1 1/2 Cups Wheat Bran
1 Cup Skim Milk
1/2 Cup Applesauce
1 Egg
2/3 Cup Brown Sugar
1/2 tsp. Vanilla Extract
1 Cup Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
1 Cup Fruit, diced apples, blueberries, strawberries or peaches
Preheat oven to 375F. In a bowl mix bran and skim milk. In another large bowl, mix together, applesauce, egg, brown sugar and vanilla. Beat in bran mixture until blended. Sift together flour, baking soda, baking powder and salt. Add to bran mixture. Fold in fruit. Scoop into greased muffin pan. Bake 15 to 20 minutes or until tops spring back. Enjoy!!!!
