Potato Salad (low fat)
4 Potatoes, perferably red, cubed, peeled if you do not like the skin
1/3 Cup low fat Mayonnaise
1/2 Cup low-fat Ranch Dressing
3/4 Cup Celery, diced
1/2 Red Pepper, diced
1/2 Cup frozen Peas, thawed
1/4 Cup Green Onions, chopped
1 tsp. Seasoning Salt
1/4 tsp. Pepper
1/4 tsp. Garlic Powder
In a pot of water, boil the potatoes for 10 to 15 minutes or until tender. Drain.
In a large bowl, mix together mayonnaise, ranch dressing, celery, red pepper, peas, seasoning salt, pepper, garlic powder and green onions. Add the cooled potatoes and toss. Refrigerate for one hour before serving. Enjoy!!!!
