Pasta with Chicken and Asparagus
4 Cups Pasta of your choice, bowtie, rotini
1 Pound Asagragus, cut into 1 inch pieces
1 Red Pepper, finely diced
1 Tbsp Oil
1 Pound Chicken Breast, skinless, boneless, cut into 1/2 inch pieces
3 Cups Fresh Mushrooms, sliced
1 tsp. Garlic Powder
1 Cup Chicken Broth
1 Tbsp. Cornstarch
4 Green Onions, sliced
2 Tbsp. Fresh Basil leaves, chopped
1/2 tsp. Pepper
1/2 tsp. Seasoning Salt
1/4 Cup Parmesan Cheese
Cook Pasta according to directions, drain.
In a frying pan, heat oil on medium heat. Add chicken and cook for 10 minutes. Add mushrooms, red pepper and asparagus. Cook 6 to 8 minutes, stirring occasionally. Add garlic powder, pepper and seasoning salt.
In a small bowl, combine chicken broth with cornstarch. Add basil and green onions. Stir mixture into chicken and vegetables. Cook and stir for 2 minutes until thickend. Toss with pasta and sprinkle with parmesan cheese. Enjoy with a salad!!!
