Lasagna Spinach Roll Ups
1 Package Lasagna Noodles
2 TBSP. Margarine
1 Red Peppers, diced
1 Green Pepper, diced
1 Cup Mushrooms, finely diced
1 Med. Onion, finely diced
2 Cups Cottage Cheese
2 Packages frozen chopped Spinach
2 Eggs, lightly beaten
1/2 Cup Parmesan Cheese
1 tsp. Pepper
1 tsp. Seasoning Salt
1 tsp. Garlic Powder

2 Cans or Jars Pasta Sauce
1 Cup Mozzarella Cheese
Preheat oven to 350F. Bring large pot of water to boil, add lasagna noodles and cook for 10 minutes. Drain and cool.
In a large pan, melt margarine and add peppers, onions, mushrooms. Cook until tender. In a bowl combine cottage cheese, drained spinach, eggs, parmesan cheese, seasoning salt, pepper and garlic powder. Add vegetable mixture.
In a pan, spread 1/2 cup pasta sauce. Take a noodle and place 1/3 cup mixture on one end and roll up. Place in pan. Continue until all noodles are rolled up. Pour remaining pasta sauce over noodles. Sprinkle mozzarella cheese over roll ups and bake for 40 minutes.
