Taco Noodle Dinner
1 Pound Ground Beef, lean
1/4 Cup Onion, chopped
1/4 Cup Salsa
3/4 Cup Water
1 Pkg. Taco Seasoning
1 Can Mushrooms, drained
1 pkg. Egg Noodles, uncooked
2 1/2 Cups Tomato Juice
1 Cup Sour Cream
In a large frying pan, brown the ground beef with the onion until meat is no longer pink. Add salsa. Stir in water and taco seasoning. Simmer for 5 minutes, then add the mushrooms. Sprinkle noodles over top and pour the tomato juice over the noodles. Stir gently. Cover and simmer for 25 minutes or until noodles are tender. Remove from the heat. Spread sour cream over top. Cover and let stand for 5 minutes. Enjoy with a salad.
