Squash and Corn Casserole
2 Eggs
1 can Cream-Syle Corn
1/4 Cup Parmesan Cheese
1/4 Cup Oil
2 TBSP. Sugar
1/2 tsp. Garlic Powder
1/4 tsp. Pepper
1/2 tsp. Seasoning Salt
1/4 Cup Onion, diced
1/4 Cup Red Pepper, diced
2 Cups Squash, any type, peeled and sliced
1/2 Cup Biscuit Baking Mix
1/2 Cup Cheddar Cheese

In a bowl whisk eggs until smooth. Stir in cream corn, parmesan cheese, oil, sugar and seasonings. Fold in onions, red pepper, squash and buscuit mix. Pour into a greased baking pan. Sprinkle with cheddar cheese. Bake in a 350F oven for 30 to 40 minutes or until lighly brown. Serve with a garden salad. Enjoy!!
