Farmer's Market Quesadillas
1/2 Cup Red Pepper, chopped
1/2 Cup Green Pepper, chopped
1/2 Cup Zucchini, chopped
1/2 Cup Red Onion, chopped
1/2 Cup Mushrooms, chopped
Optional - 1/2 Cup Chicken Breast, cooked and sliced in strips
1 TBSP. Olive Oil
6 Tortillas
1 and 1/2 Cup Cheddar Cheese, grated
Sourcream and Salsa
In a large frying pan cook vegetables in olive oil for about 5 minutes until tender. Add chicken breast if desired, cook another 5 minutes. Remove from pan.
In same skillet, place one tortilla and place 3/4 cup vegetable mixture on top. Top with 1/4 cup cheese. Top with another tortilla. Cook unitl brown and then flip over. Cut into 6 pieces and serve with sourcream and salsa. Enjoy!!
