Cheesy Beef and Rice
1 Cup Long Grain Brown Rice
1 LB. Lean Ground Beef
1/4 Cup Onion, minced
1/4 Cup Green Pepper, diced
1/2 tsp. Garlic Powder
Pinch of Salt and Pepper
1 Cup Sour Cream
1/3 Cup Milk
1 Cup Cheddar Cheese, grated
In a pot boil 2 cups of water. Stir in rice. Cover and simmer for 45 minutes. In a frying pan, brown the ground beef with the onion, green pepper, salt, pepper and garlic powder. Mix the rice with the beef mixture. Stir in sour cream and milk. Spread into a casserole dish. Sprinkle with cheese. Bake in a 350F oven for 30 minutes or until cheese is brown and bubbly. Enjoy with a salad!!
