Cranberry Cake
2 Cups Fresh Cranberries, rinsed, pat dry
1 1/2 Cup Sugar
1/2 Cup Chopped Walnuts or Pecans
2 Eggs
1 Cup Margarine, melted and cooled
1 Cup Flour
Mix together cranberries, 1/2 cup sugar and nuts. Pour into a greased pie plate. Beat together the eggs and remaining 1 cup sugar. Add the melted margarine and flour. Mix well. Pour batter over cranberry mixture and bake in preheated oven of 325F for 50 to 60 minutes. Serve with vanilla ice cream. Enjoy!!
