Ham Frittata
4 Cups Potatoes, peeled and diced
1 Tbsp. Butter
1 tsp. garlic powder
1 tsp. seasoning salt
1/2 tsp. Pepper
2 Onions, diced
1 Cup Flour
1 tsp. Baking Powder
2 Cups Milk
6 Eggs
1/2 Green and Red Pepper, diced
1 Cup Broccoli, chopped
1 Cup Mushrooms, diced
2 Cups Cheddar Cheese
1 Cup Cooked Ham, diced
Place potatoes in a pot with enough water to cover them. Bring to boil and cook for 10 minutes until tender but firm, drain. In another pot melt butter and saute onions, peppers, mushrooms, broccoli, ham, garlic powder, seasoning salt and pepper. In another bowl, mix flour, baking powder, milk and eggs. In a casserole dish mix potatoes with onion mixture. Pour over flour and egg mixture and stir. Sprinkle cheese over top. Bake in a preheated 350F over for 30 minutes or until the eggs are no longer runny and when you place a knife in the centre comes our clean. Serve with a salad. Enjoy!!!
