Peach Coffee Cake
1 Cup Sugar
1/2 Cup Butter or Margarine
1 Cup Sour Cream
1 tsp. Vanilla Extract
2 Eggs, lightly beaten
2 Cups Flour
1 1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
4 Cups Peaches, peeled and sliced
Crumb Topping:
1/4 Cup Flour
1/4 Cup Sugar
1 tsp. Cinnamon
3 TBSp. Cold Butter or Margarine
Preheat oven to 350F. Grease and flour a baking pan. In a large bowl, cream together butter and sugar. Beat in sour cream, vanilla and eggs. Mix in flour, baking powder, baking soda and salt. Spread 1/2 the batter in the bottom of the pan, layer with peaches and top with remaining batter. In another bowl mix the crumb topping, flour, sugar and cinnamon. Cut in cold butter or margarine until the mixture in crumbly. Sprinkle evenly over the batter. Bake for 45 minutes or until a knife inserted in the centre comes our clean. Enjoy!
