Stuffed Spaghetti Squash
1 Spaghetti Squash
1/4 Cup Water
2 Tbsp. Margarine
1/2 tsp. Seasoning Salt
1/4 tsp. Pepper
1/4 tsp. Garlic Powder
1/4 Cup Chopped Zuchinni
1/4 Cup Shredded Carrot
2 Green Onions (cut into pieces)
1/4 Cup Diced Tomatoes (fresh or canned)
1/4 Cup Mozzarella Cheese
Preheat oven to 350F. Cut squash in half lenghtwise and clean out the seeds. Place the squash inside up on a baking pan the has sides and pour the water into the pan. Rub the margarine into the flesh and sprinkle with seasoning salt, pepper and garlic powder. In a bowl mix zuchinni, carrots, green onion and tomatoes. Fill the halves of the squash with mixture evenly. Cook until tender about 30 to 45 minutes. Sprinkle with cheese and broil for five minutes. Scoup out the mixture from the skin and enjoy!!**For a complete meal you can mix in cooked ground beef and cooked rice to the vegetable mixture before putting into the oven.
