SPINACH SALAD
1 Bunch Spinach leaves, washed, or 1 pre-packaged bag of Spinach
2 Hard Boiled Eggs (peeled and diced)
1 Cup Fresh Mushrooms (sliced)
1/4 Cup Red Onion (sliced thin)
1/4 Cup Bacon Bits
Dressing:
1/2 Cup Oil
1/4 Cup Vinegar
1 1/2 TBSP. Sugar
1/2 tsp. Seasoning Salt
In a large bowl mix together spinach leaves, eggs, mushrooms, red onion and bacon bits. In a small bowl mix oil, vinegar, mustard, sugar and seasoning salt. Pour dressing over spinach mixture just before serving. Mix thoroughly. Enjoy!!
