BRAN MUFFINS
2 Cups Milk
1 Tbsp. Lemon Juice
2 Cups Bran
1 Cup Wheat Germ
1/3 Cup Oil
1/2 Cup Applesauce
2 Eggs
1/2 Cup Honey
1 tsp. Vanilla
1 tsp. Baking Soda
2 tsp. Baking Powder
1 tsp. Salt
2 Cups Whole Wheat Flour
Mix milk and lemon juice in a large mixing bowl and let stand for 10 minutes. Mix in bran and wheat germ and let stand. In another bowl beat together oil, applesauce, eggs, honey and vanilla. Stir this into the bran mixture and add any extras(ideas below). Sift dry ingredients together and quickly stir into bran mixture. Spoon into greased muffin tins and bake at preheated 375F oven for approximately 20 minutes.

Additions: Grated carrots, walnuts, raisins, blueberries, strawberries, raspberries, or any other fruit you like.

Pina Colada Muffins - add coconut and chopped pineapple.
