IRISH BANNOCK
2 Cups Flour
2 Tbsp. Sugar
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
2 Tbsp. Butter or Margarine
1 Cup Buttermilk
1/2 Cup Currants or Raisins
In a bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter with a pastery cutter. Add buttermilk until dough is soft. Stir in currants or raisins. Knead dough for five minutes or until smooth. Form doung into a 7 inch round ball. Place on greased cake pan or cookie sheet. Cut 1/2 inch deep cross on the top. Bake in a 375F oven for 40 minutes.
