Healthy Blueberry Muffins
2 Cups Flour - can be whole wheat
1 Tbsp. Baking Powder
1/2 tsp. Salt
1/2 Cup Sugar
1 Egg
1 Cup Skim Milk
1/3 Cup Applesauce
1 Cup Frozen Blueberries
In a mixing bowl, put flour, baking powder, salt and sugar. Add blueberries and coat. In another bowl, mix egg, milk and applesauce. Add liquid ingredients to the dry ingredients and mix to moisten. Spoon into lined muffin pans and bake in a 360 F oven for 15 minutes or until knife comes out clean when put in center of muffin. Can add optional ingredients like flax seed, bran, chocolate chips or nuts. Enjoy!!
