Parmesan Chicken with Roasted Vegetables
4 Chicken Breast (can use thighs)
1/2 Cup Grated Parmesan Cheese
1 tsp. Garlic Powder
1 tsp. Seasoning Salt
1/2 tsp. Pepper
4 Tbsp. Olive Oil
5 Cups Vegetables, chopped (broccoli, potato, sweet potato, cauliflower, bell peppers)
Preheat oven to 400F. Mix together parmesan cheese and spices. Add 2 Tbsp. olive oil to make a paste. Place chicken on baking pan, cover each breast with equal amounts of mixture. Toss vegetables with 2 Tbsp. olive oil and additional 1 tsp.seasoning salt. Place on other side of baking sheet, spread evenly. Bake for 45 minutes or until chicken is no longer pink and vegetables are tender. Enjoy!!!
